What is freekeh and how do I cook it?

What is freekeh
Freekeh is a supergrain made from young green durum wheat. 

Freekeh  is an Arab food made from young green durum wheat that has been cut while the grains are still soft and full of moisture. It is considered a supergrain.

What are the other names for freekeh?

It is also known as farik or frikeh or even frik. You may also see it spelled “freekah”.

What does freekeh look like?

The grains are polished and cracked they look a lot like like their supergrain bretheren farro, spelt, and bulgur wheat. 

What does freekeh taste like?

This is easy to digest and fresh and sweet, with a nice nuttiness. 

Why is freekeh good for you?

It is good for you because of its incredibly high fiber content. It as been credited with assisting with weight loss because fiber fills you up and keeps you feeling full. Whole grains such as freekeh are also full of essential nutrients such as selenium, potassium and magnesium. Freekeh is also a good source of protein and fiber. It has 0.2 oz  (6 g) of protein and 0.14 oz (4 g) of fiber per serving.

How do you cook freekeh?

Combine 5 cups of cold water with 2 cups of freekeh as well as 1 tsp. salt and (optionally) 1 tbsp of olive oil in a deep saucepan. Bring it to a boil. Stir occasionally. Cover the saucepan with a tight lid. Lower the heat and simmer for 10 to 15 minutes, if you are cooking cracked grain. For whole grain, simmer for 40 to 45 minutes. Then drain, as needed, and serve.
